A few recent meals Landon prepared that were absolutely spectacular:
Grilled ribeye steak, oven potatoes (he parboils them, “roughs up the edges,” and then finishes them in the oven in duck fat so they get this insanely crisp exterior), charred whole cauliflower with tahini sauce and pickled red onions
Halibut in a green curry sauce, green beans, rice (recipe here)
Roast chicken, asparagus in a lemon-olive oil dressing, oven fries, green salad
Grilled skewers of shrimp, onion, and peppers marinated in a coconut milk and herb sauce; garlic rice; avocado wedges with thinly sliced onion in a garlic dressing
Lemon pasta with pine nuts and parm, radicchio-frisee salad in vinaigrette, broccoli rabe in garlic-calabrian chili dressing
Pork BBQ (Landon smokes a pork butt once a year and then freezes the leftovers in bags that we parcel out across the remainder of the year), mac and cheese, sliced cucumbers in a creamy dill sauce

Loved this post!!! Made me hungry and gave me many good ideas. I don’t have a ton to contribute, but I’ve been making chili and soups a lot. I also made a dupe of Don Peppe’s house salad with iceberg lettuce, tomato, red onion, olives, and pepperoncini. Dressing is olive oil, red wine vinegar, salt, pepper, oregano, garlic powder. Loved it. And loved that it used iceberg which up until now I thought was gross but for this salad it really works and now I totally get it.
YUM – I love a salad with olives and pepperoncini. That made my mouth water!!

A friend gifted me the cookbook “Six Seasons: A New Way with Vegetables” and it has really helped me grow and develop my relationship with vegetables that are not my traditional “go to” vegetables. It also has a lot of info about seasonality, and even little tidbits of how to choose the best vegetables at the market or grocery store. I’ve found it to be both helpful, instructive, and joyful!

I can’t wait to hear everyone’s menus! I’m always trying to get out of a meal rut. Love the sound of those shrimp skewers. I’m not very good at cooking seasonally – our yard is too shady for a vegetable garden and I don’t visit farmers markets. Maybe a goal for this year?? But when I think of a spring dish, I think of risotto with peas or leeks or asparagus – or all three! Or a frittata with those ingredients plus cheese. Gaby Dalkin has several seasonal recipes in her first cookbook, What’s Gaby Cooking (pizza for all seasons, smoothies for all seasons, etc). Other winners in that book are the roasted potatoes (I make them almost once a week) and the raspberry white chocolate cheesecake bars – my go to whenever I need to bring dessert and everyone raves over them. We’re hosting a few families for brunch this weekend and I’m planning a breakfast taco bar…not the traditional spring brunch! But there will be teenage boys here and it felt appropriate, haha. Plus I love tacos year round!
